Simple Vegan Waffles

These vegan waffles come off the back of the frustration of recipes that require about 100 different ingredients. WHO has the time (or money) to go buy all the seeds, husks, apple sauces, coconut flours, unicorn hair....? I mean it's hard enough to even find plain flour right now!

Simple vegan waffles

Ingredients: 1 & 1/4 cup plain flour 1&1/4 cup oat milk (I find a barista version works best because of the heat) 1-2tbsp sugar 2 tsp baking powder 1 tsp melted coconut oil Method: Preheat the waffle iron. In a large mixing bowl combine the flour, sugar and baking powder. Slowly add the oat milk and coconut oil until the mix reaches a thick, creamy consistency. Pour mixture into the waffle maker and cook for 4-5 minutes. Repeat until all mixture has been used up. (I like to keep the cooked waffles in the oven in the meantime). Enjoy with your fave toppings!
